New Meal Plan, April 21, 2013

Happy Sunday! Sorry for the delay, getting the hang of this whole blog thing and kids has been a learning curve.

New news in our house: We have a new to us truck nicknamed The Beast.  My husband is ecstatic and I am just happy to have my truck back to use as I please after 5 months.  The new house is coming together quickly, we picked out the house colors and light fixtures in the last few weeks.  And most exciting of all is that I am taking a kid-free vacation this coming weekend.  I am flying to Idaho to see my oldest friend for some good old fashioned girl time.

Now on to what you came for, my meal plan for this last month.  Most things were not shocking deals on my grocery list so I will go ahead and post all 4 weeks.  I keep new ideas pinned on my Pinterest Board, so check in and follow me there for thrifty and delicious meals.

Week 1

Sunday- Slow-cooker Cajun Stew with rice (leftovers)

Monday- Crockpot Tortellini (rave reviews from my husband)

Tuesday- Chicken Enchiladas

Wednesday- Chili with cornbread (leftovers)

Thursday- Quinoa and Vegetables (I was pleasantly surprised at how well this turned out)

Friday- Leftovers (the Quinoa and Vegetables was better cold)

Saturday- Penne Pasta with Chicken and Asparagus (my favorite meal of the week)

Week 2

Sunday- Leftovers (Penne Pasta with Chicken and Asparagus)

Monday- Leftovers (Quinoa and Vegetables, it was never ending)

Tuesday- Ground Beef Tacos

Wednesday- Jumbalaya (my favorite meal of the week)

Thursday- Shake & Bake Chicken with Broccoli Slaw (homemade because I had corn flakes on hand)

Friday- Spaghetti with meat sauce (simple, but a crowd pleaser)

Saturday- PORTLAND! We drove up to Portland and had breakfast at Voodoo Donuts, lunch at the Portland Saturday Market, and we took my college student nephew out to dinner in Salem.

Week 3

Sunday- Baked Chicken with peas and homemade “Fancy Bread” (the bread wasn’t as flavorful as I expected but it was delicious served with olive oil and balsamic vinegar to dip)

Monday- Pasta Con Amoré (my husband’s all time favorite meal)

Tuesday- Beef Tacos

Wednesday- Farfalle Pasta with Chicken and Spinach Pesto (so worth the effort)

Thursday- Crockpot Italian Chicken with broccoli

Friday- Papa Murphy’s Take and Bake Pizza (yup, budgeted that out of our entertainment money)

Saturday- Creamy Cajun Pasta (I quadrupled the recipe and used a drained can of diced tomatoes with green chilies in place of a fresh tomato)

Week 4 (this coming week)

Sunday- Leftovers (Creamy Cajun Pasta is better the second day)

Monday- Leftovers (Pesto Pasta and pizza must get eaten)

Tuesday- Chicken Tacos with Black beans

Wednesday- Sesame Chicken with Fried Rice (my husband’s request this week)

Thursday- Lemon Pepper Baked Chicken with Parmesan Roasted Zucchini

Friday- White Bean and Bacon Stew with Baked Sweet Potato (I will be gone so I already have the stew made and ready to heat for my husband and The Girls)

Saturday- Fend for Yourselves (I have left a lot of things available for my husband to make including English Muffin Pizzas, Grilled Cheese and Roasted Red Pepper and Tomato Soup, PB&J’s, Chicken Strips, Cereal, and Oatmeal.  It is up to him and the kids to guide themselves while I worry about nothing other than uninterrupted girl time)
